Belgian Waffles
Although the show came out about 2 years ago, it seems like suddenly everyone is talking about “Severance.” It just may be one of the most unique, interesting and captivating shows I have ever seen. Without giving anything away, in the show the “severed” employees can be rewarded with a “Waffle Party,” and after watching that scene I thought, Hey, let’s make some waffles. These are crisp on the outside and light and fluffy on the inside and I highly suggest adding the pearl sugar as it adds these pleasant pockets of sugary crunch.
Makes about 6 square waffles
Ingredients-
1 1/2 cups all purpose flour
1 teaspoon salt
3 tablespoons sugar
2 1/4 teaspoons baking powder
2 large eggs separated (you will use both the yolks and the whites)
1 1/4 cups milk (whole or 2% ideally)
1 1/2 teaspoons vanilla extract
3 tablespoons butter, melted (plus more for help pan)
1/4 cup pearl sugar (optional)
Steps--
In a large bowl whisk together the flour, salt, 3 tablespoons of sugar, and baking powder.
In a separate bowl or measuring cup, whisk together the 2 yolks, milk and vanilla extract.
Gently whisk the milk mixture into the flour mixture just until combined, don’t over mix. Gently whisk in the melted butter.
In a separate bowl and using electric hand beaters or a stand mixer, beat the 2 egg whites until they are stiff.
Gently fold the egg whites into the batter just until you don’t see large streaks of egg white, but small chunks are okay. Fold in the pearl sugar (if you are using).
Allow your batter to sit for about 10 minutes while you preheat your waffle maker.
When you’re ready to cook the waffles, be sure to spray the inside of your waffles maker with nonstick spray right before you pour in the batter. Cook the waffles on medium high heat (about 5 mins or as directed on your machine).
