Rosemary Candied Bacon
Serves 3-4 people
Ingredients-
Roughly 6 Slices of Thick Cut Smoked Bacon
Spice Rub-
3 Tablespoons Dark Brown Sugar
1 Teaspoon Smoked Paprika
1 Teaspoon Ground Mustard
1/4 Teaspoon Black Pepper
1 Teaspoon Chili Powder
1.5 Teaspoons Fresh Rosemary, Chopped
Dash of Salt
Glaze-
1.5 Tablespoons Pure Maple Syrup
Steps-
Preheat the oven to 375F (or 350F convection)
Place a wire rack on top of a sheet pan that is lined with aluminum foil (makes for easier clean up). generously stay the rack with nonstick cooking spray.
Mix all the Spice Rub ingredients together with a spoon or your fingers. using your hands generously rub the bacon slices on both sides with the spice rub. You really want to encrust it the best you can.
Lay the coated bacon slices onto the greased wire rack (that is on top of the sheet pan to collect the drippings). Make sure the bacon isn’t on top of each other, you want to give it room to brown.
Place the bacon in the oven and bake roughly 15-25 minutes or until it is a dark golden color and the rub has caramelized nicely. Remove it from the oven and generously baste the tops of the bacon with the maple syrup using a basting brush.
Place the bacon back in the oven and cook abother 5-8 minutes or until the maple syrup has caramelized onto the bacon and the bacon is nice and crisp around the edges. Allow the bacon to cool for at least 15 minutes as it will firm up even more. Enjoy!
