Southern Style Turkey Gravy
A reduced fat version of Southern Sausage Gravy made with ground turkey! Enjoy it with some runny eggs on top and your favorite flaky biscuit! I’m sorry to say I can’t share my biscuit recipe at this time as it is a secret, but maybe one day :)
Feeds 2-3 people
Ingredients-
1.5 tablespoons Olive Oil
1/4 teaspoon finely minced garlic (I used jarred)
1/2 Pound Ground Turkey
1.5 Tablespoons All Purpose Flour
1 Teaspoon Fresh Rosemary, Finely Chopped
1 to 1.5 cups of Milk (I used 2% but you can use whole or skim)
1/4 cup Chicken Broth
Salt & Pepper
1 teaspoon lemon juice
Steps-
Cook your biscuits! While they’re in the oven prep the gravy!
Gravy-
Heat a cast iron skillet or a nonstick skillet on medium heat. Add the olive oil and minced garlic cook and cook for 2-3 Mins or until fragrant.
Add the ground turkey and break it up with a wooden spoon. Break it up the best you can and brown the meat all over.
Sprinkle the flour and chopped rosemary and a nice dash of salt and freshly ground black pepper on top of the turkey meat and stir to combined. Gradually add 1 cup milk and cook until mixture comes to a boil and thickens, stirring constantly. Add the chicken stock and lemon juice and stir. If it’s too thick add more Milk.
Reduce heat to medium-low; simmer 2 minutes, stirring constantly. Season to taste with more salt and pepper as needed.
Cook up some fried, poached or over easy runny eggs and serve them on top of a nice scoop of the gravy beside your warm biscuits. Add a little hot sauce if you’d like on top!
