Brunch Pizza

My favorite meal period is Brunch AND one of my favorite foods of all time is Pizza…I mean who’s isn’t? You’re getting the best of both worlds here with my extremely delicious Brunch Pizza! I make mine on the outdoor grill which cuts the cooking time in half and it makes for an easy clean up! This pizza has such an amazing blend of textures and flavors such as crispy yet chewy pizza crust, creamy parmesan cream sauce, crunchy bacon, jammy egg yolk and gooey cheese! It really isn’t too hard to prepare especially if you buy your pizza dough, and it looks pretty darn impressive! This is definitely something you want to make when company comes over, or maybe even for Mom this weekend, it is Mother’s Day after all!

Ingredients-

  • 1 Ball of pizza dough ( can be store bought or homemade. You can use my dough recipe here.)

  • 4 Eggs

  • About 3/4 cup tomato sauce (homemade such as my pizza sauce recipe here..or store bought)

  • 3 Strips of thick cut bacon, chopped into 1/2 inch pieces

  • Shredded Mozzarella (about 1 cup) and or Sliced Fresh Mozzarella (I like a combination!)

  • Prosciutto, about 4-5 thin slices

  • 1 Sprig fresh rosemary, finely chopped

  • 3 Tablespoons extra virgin olive oil

  • 1/2 Teaspoon minced garlic

  • Chopped Chives, Scallions and it’s Basil for garnish

    Parmesan cream sauce-

  • 2 Tablespoons Butter

  • 1 Tablespoon Extra Virgin Olive Oil

  • 3 Tablespoons All Purpose Flour

  • 1 to 1.5 Cups Milk (whole, 2% or skim will work)

  • 1/2 cup grated or shredded Parmesan Cheese

  • Salt & freshly ground black pepper to taste

Steps-

  1. Prepare the Parmesan Cream Sauce-

    Heat butter and 1 tablespoon olive oil in a small saucepan over medium heat. When the butter is melted,  Add the flour and whisk until flour is lightly browned.
    Whisk in the milk and Parmesan cheese and a dash of salt and black pepper. Cook, whisking continuously, until cheese is melted and sauce has thickened slightly, about 5 minutes. Remove from heat. Set aside.

  2. In a medium skillet on medium heat cook the bacon until you leave desired texture. I prefer nice and crispy! Then drain on paper towels and set aside.
    In a small Bowl stir together 3 tablespoons of olive oil, the minced garlic and rosemary and a pinch of salt and pepper. Set aside.

  3. You can cook your pizza in the oven if you’d like but I like to do it on my grill for easy clean up and a nice crispy crust! It’s also super quick to cook! To do this, heat your grill on medium heat while you get your dough rolled out.

  4. Using a rolling pin roll out your dough until it is about 12 inches in diameter, you want it fairly thin. when your grill is hot carefully place the pizza dough onto the grill making sure it is nice and spread out.

  5. Use a pastry brush to lightly brush the top of the pizza dough with the garlic rosemary oil you prepped earlier.

  6. When the dough begins to bubble up and is nice and golden on the bottom, use tongs to flip over the dough . Now the next part needs to be done quickly to ensure your dough doesn’t burn…

  7. Quickly brush the top of dough again with the garlic oil. Use a big spoon or ladle to spread a nice layer of the Parmesan cream all over the top of the pizza. Next, sprinkle your crispy bacon bits all over the pizza. Then, place dollops of tomato sauce all throughout the pizza. Next, quickly crack your 4 eggs directly into the pizza spread apart from each other so it cooks more easily and the flavors are distributed. Close the lid of your grill and let the eggs start to cook. You want the whites to set and the yolks to still be slightly runny. When the eggs are almost set add your mozzarella cheese (as much as you’d like) but be sure not to cover the yolks of the eggs. Close the lid of your grill again.

  8. Once the eggs are set and the cheese is melted using tongs carefully slide the pizza off the grill onto a cutting board or serving tray. Nicely lay the sheets of prosciutto over the top as well as a nice sprinkle of your choice of chopped chives, scallions and or basil.
    Slice up and enjoy!!
