Citrus Marinated Grilled Chicken

Sometimes simple is best! This simple, easy to make marinade will leave you with extremely flavorful and tender chicken. The bright, fresh flavors of the citrus fruits and rosemary will tingle your tastebuds in the best way possible. This is one of those recipes you will keep in your repertoire and make time and time again.

Ingredients-

Citrus Marinade-

  • 1 Medium Shallot, diced finely

  • 3 Tablespoons Extra Virgin Olive Oil

  • 2 Tablespoons Honey

  • 2 Teaspoons Minced Garlic

  • 1 Sprig of Rosemary, finely chopped (about 2 teaspoons)

  • 1 Teaspoon Salt

  • 1/4 Teaspoon Pepper

  • 1 Heaping Tablespoon of Dijon Mustard

  • Zest and Juice of 1 Whole Large Orange (I used naval orange)

  • Zest of 1 Whole Lemon and the Juice of Half a Lemon

Chicken-

  • Boneless, Skinless Chicken Breast’s (this amount of Marinade will cover up to 3lbs of chicken)

  • Salt & Pepper


Steps-

  1. In a bowl or measuring cup whisk together all the marinade ingredients. Set aside.

  2. Butterfly and or cut your chicken breasts in half vertically if they are very thick. Using a meat mallet, pound your chicken cutlets to make them thinner and even thickness throughout.

    Place your chicken in a plastic ziploc bag or a container and pour in the marinade. Make sure all the chicken is well coated. Set the chicken in the marinade into the fridge for a minimum of 5 hours or up to a day.

  3. Heat up your outdoor grill or indoor grill pan. When it’s nice and hot, remove the chicken from the marinade and place them flat on your grill. Sprinkle the chicken with salt and black pepper. Cook the chicken about 4 minutes on each side or until fully cooked (165F internal temp).

  4. Serve and enjoy! As shown in the photo, we enjoyed our chicken over a roasted beet salad with goat cheese, orange segments and pistachios.
